Erasmus: A Visit to the Cooperative Fromagère Jeune Montagne

We made another visit to a cooperative to discover a form of production in solidarity – a cooperative to make cheese.

La Cooperative Fromagère Jeune Montagne was founded in Laguiole in 1960 by a group of young farmers to save the traditional way of making cheese. The cooperative collects the milk, makes the traditional cheese (now with modern machines as well as with a lot of manual work) and sells it. The milk comes from a special race of cows – the Aubrac. These cows give less milk but a very fat one which gives a special taste to the cheese.

Nowadays 76 farmers give their milk to the cooperative which gives work for a living for approximately 300 families.

We could see the making of the cheese and even better could taste different sorts of it!!!

After our visit, we naturally also wanted to get to know the cows. Off to the pastures!
